The tour begins at Ortahisar Castle, an 86-metre rock outcrop riddled with tunnels and chambers that towers over the old village of the same name. Once a natural fortress and refuge, and still surrounded by cave stores used to keep local produce, it offers sweeping views across the valleys — a quieter, more authentic counterpart to Uçhisar and a fine introduction to southern Cappadocia.
Formerly known as Sinasos, the town of Mustafapaşa was a prosperous Greek community until the population exchange of 1923. Its winding streets are lined with elegant 19th-century Greek stone mansions, their façades richly carved, alongside old churches and a medrese — one of the best-preserved examples of Greek-Ottoman architecture in Cappadocia, and a peaceful, atmospheric stop.
Tucked away near the village of Cemil, the Keşlik Monastery is a little-visited rock-cut complex of churches, a refectory and monks' cells dating from around the 9th century. Its frescoes, darkened by centuries of candle and lamp soot, are gradually being revealed, and its ancient wine press and communal dining hall offer an intimate glimpse into Cappadocian monastic life away from the crowds.

Once an important Byzantine settlement, it holds painted churches such as the Snake and Hidden churches, and the village is famous for its handmade cloth dolls, a local tradition still practised today.
Descend into the Kaymaklı Underground City, one of the largest and deepest of Cappadocia's subterranean cities. Carved level upon level into the soft rock — with stables, kitchens, wine cellars, chapels and ventilation shafts — it once sheltered thousands of early Christians from invaders, sealed off with great rolling stone doors. Exploring its narrow tunnels and hidden chambers is one of the most extraordinary experiences in the region.
